Chili's Grilled Caribbean Chicken Salad Recipe - Welcome to Summer!

Grilled chicken salad Caribbean Chile is almost too good . That's perfect. It is bright , cold, juicy, sweet , succulent, warm ... sensation after sensation is on a plate! It is with great pleasure that I share this amazing salad recipe with you.
Grilled chicken salad Caribbean Chile - Ingredients:

    
4 boneless chicken breasts, boneless and skinless
    
½ cup store bought Teriyaki marinade
    
4 cups chopped green leaf lettuce
    
4 cups lettuce
    
1 cup chopped red cabbage
    
½ cup drained mandarin segments
    
½ cup pineapple chunks empty
    
1 ½ - 2 cups fried tortilla strips fees ( , broken tortilla thin side , if you prefer)
    
pico de gallo (recipe below)
    
Honey Chile Lime Dressing (recipe below)

Peppers grilled chicken salad Caribbean - Directions:

    
In a large plastic bag with zipper, shake chicken and teriyaki sauce. Marinate in refrigerator for at least two hours ( preferably overnight ) .
    
Combine lettuce and cabbage in a large mixing bowl. Mix well, cover and refrigerate.
    
When you 're ready to cook chicken on a George Foreman grill or barbecue in the yard about 4-5 minutes on each side.
    
Cut the grilled chicken into thin strips
    
2-3 In large serving plates , divide the salad evenly cooled .
    
Top each salad with tortilla strips , mandarin oranges , pineapple chunks , pico de gallo (recipe below) , and grilled chicken .
    
Serve with a little honey chili lemon sauce (recipe below) .

Pico de Gallo:

    
4 plum tomatoes, diced
    
½ cup Spanish onion, chopped (or your favorite kind of onion )
    
2 c . fresh, raw jalapeno ... seeded , ribs , and diced
    
2 c . fresh cilantro , chopped
    
pinch of salt
Simply mix all ingredients in a small bowl and let cool.
Honey Lime Chili Dressing:

    
¼ cup honey
    
¼ cup Dijon mustard
    
1 ½ c . sugar
    
1 ½ c . apple vinegar
    
1 ½ c . lime juice
    
1 c . sesame oil

With an electric mixer , combine all ingredients in a small bowl until smooth and well blended. Cover and refrigerate .
